
In 1998 we started to make our first ARVA VITIS wine with a personal commitment to select exclusively great vineyards to create superior wines. In 2001 we were able to create “AVALON de Arva Vitis”, a special wine of superior quality from a single vineyard with old Tempranillo vines.
But we want to go further and surprise with other unique wines.
For this purpose we started the construction of a small winery in the Manzanares region next to an old Tempranillo vineyard of our property. This vineyard is unique because the area was not affected by phyloxera and has its original Tempranillo roots, something rare to encounter in Europe. We have treated this vineyard in a natural way and is officially registered as an organic vineyard. In our new winery we want to create our new “pago” wine from this vineyard.

The grapes were hand-picked from the vineyard and they were transported in small boxes to the winery were the destalked grapes were macerated before fermentation for several days in French Allier oak barrels at a temperature between 1 and 7 ºC. For this purpose we installed a special intercooler to keep the grapes at low temperature. This was done to obtain a maximum fixation of colour and flavour before fermentation. The fermentation took place during 2 weeks in the same oak barrels. After this the grapes were carefully pressed in a small pneumatic press and the wine continued in the barrel to undergo its malolactic fermentation. The wine continued its ageing in barrel till it was bottled during October 2005. We released our first pago wine "Grial de Avalon 2003" in November 2006.
